Breakfast Casserole Recipe

We discovered this Breakfast Casserole from a Bed and Breakfast Barry and I were able to stay at years ago. She was gracious enough to share her recipe. I just wish I could remember her name. This is my families favorite breakfast on special occasions. It is a Christmas tradition for us. I can easily prepare it ahead of time and then enjoy my morning with the family. We like to make Christmas Day where mom can relax and play too.

Our Christmas mornings consist of waking up and finding little ones starring at their stockings! We usually wake up to them chatting about what could be in their stocking. (To this day I am surprised they never look inside! Somehow our two oldest set the stage for NOT looking and everyone has followed their lead!) I preheat our oven, start a pot of coffee and pop in the casserole.

While the casserole bakes we begin the dig...everyone taking a peak at what their stocking holds. By the time all of this has occurred it is time for the Breakfast Casserole. Such a joy to be in P.J.'s, everyone happy and eager to be together! Next we grab a camera, a trash bag, the screw drivers, scissors, and batteries if needed. With tummies full and all children, teens, and adults fully awake....Christmas begins as we take turns enjoying the wide open eyes and joyful squeals as we open our gifts!


 

Breakfast Casserole

by Bed and Breakfast

Bake 350 for 40 minutes


 

Ingredients:

Crescent rolls

1 lb sausage

Dozen eggs

1 bag of shredded hash browns

Chopped onion

Chopped green bell pepper

Colby jack cheese

Directions:

Take crescent roll and lay flat connecting all edges in bottom and up the sides of the casserole dish. Brown the sausage. Add chopped onion and bell pepper while hot to saute. Scramble and cook eggs adding to sausage. Add hash browns to sausage mixture. Pour all the sausage mix into a casserole dish on top of crescent rolls. Cover top with shredded cheese.

Cook 350' for about 40 minutes.
