A Recipe For a Crowd

Teens are out playing Ultimate Frisbee.
Toddler is napping.
Little boys and dad have crashed too.
Oldest and youngest daughters are shopping.
I...am in a quiet home and enjoying the calmness!

I have been preparing a meal for a friend and realized this is a great recipe to pass on! If we are having a crowd, you can bet this will be one of the meals served! This is a build your own meal. You prepare all the ingredients and then the crowd can pile on what they like.

Feista
(this will feed 6)

Meat mixture...(We double this for our family)
(I will often double our batch for our family and freeze 1/2 of the meat mixture for another day)
1 lb ground beef (browned)
1 can of stewed tomatoes
1 can of tomato sauce
1 can of mexi beans or chile beans
1 pkg of chili seasoning
1 small onion
Mixed the above ingredients together, then simmer for 30 minutes.
While the meat mixture simmers....I prepare the rest.
instant rice
fritos (some crushed for the bottom of the pile and then another bag for chips on the side)
lettuce (shredded lettuce)
tomato (diced)
onion (chopped)
cheese (shredded colby jack is what we use)
black olives
Italian dressing
picante sauce

Line up each of the items and let the crowd pile on what they like.
Here is our pile order...LOL
crushed fritos
rice
meat mixture
lettuce
onion
tomatoes
cheese
black olives
Italian dressing
bag of fritos
picante sauce

  2. I have such fond memories of eating this at the Cobb's house. :-) Thanks for the reminder! Would LOVE all of your favorite/easy/inexpensive recipes. When things get busy here, I fall back into a rut. Ha!
